Mixed Leaf and STW Pesto Grilled Chicken Salad

    One thing lead to the other. There was this pesto left and a bit leftover pasta and a pack of mixed salad leaves. Decided that I will have a grilled chicken…I rushed off to the shop. Brr….It was so chilling outside. Marinated this for 45 mins. And grill-grill-toss-toss and the dinner is ready.A perfect one. Effortless and quick too.

Being an Indian, I love to take a break from our lengthy cooking and have these no-effort-cooking-recipes too. My food for sure deserves best pix. I wish they look as drooling as they are. I will do it.

Cooking time : 15 min 
Serves : 2

What :

…….for the chicken

  •      2 Chicken Breast

….for the marinade

……for the mix-leaf salad

  •      1 pkt Mix-Leaf Salad

   …..for the dressing

  •      1 tbsp Olive Oil
  •      1 tsp White Wine Vinegar
  •      3 Garlic Pods
  •      Salt
  •      Pepper

How :

–       For the chicken, mix all the ingredients for the marinade. Make 2-3 cuts on each side of the chicken breast. Coat the breast fillets with this marinade and marinate for 1 hr.

–       Heat the grill, place the chicken fillets on it and cook for 5-7 minutes on each side.

–       For the salad, finely chop the garlic pods and whisk all the dressing ingredients in a small bowl. Take a mixing bowl, pour the dressing over it and mix well.

–       Assembling : On a plate arrange the mix-leaves and place the grilled chicken.

–       Serve Hot and Yumm……!!!
