Mexican Vegetable Rice

A Fresh colorful rice. Its all bout your veggies and colorful ones too.

If it’s a lazy day and you crave some hot-home-made easy meal…..this could be it. Though you should cut the veggies,you can still afford to be lazy as there is not much other work involved. Switch on the rice cooker and cook the rice. While its done chop the veggies and saute them……Thats as simple as it. I topped them with some pepitas (spiced roasted pumpkin seeds ) to have that crunchy effect. Totally it was good and light. We both had couple of servings more too.

Serves : 4


What :

  •      1.5 cups Long Grain Rice
  •      2 Courgettes
  •      1 Red Capsicum
  •      1 Yellow Capsicum
  •      1 medium Onion
  •      2 tsp Paprika
  •      1 tsp Garlic Powder
  •      1 tbsp Coriander Leaves
  •      Salt
  •      Oil
  •      2 tbsp Pepitas (optional)
  •      1 tsp Lemon Juice  (optional)



–     Cook the rice. Spread and cool it on a plate so that the grains are separated.

–     In a pan heat the oil, and add the onions and saute for a minute till it is cooked.  Add the finely chopped courgettes and capsicums. Add paprika, salt , lemon juice, garlic powder and mix well. Cook for 3 minutes or till done.

–     Add the rice and give it a good mix. Check the seasoning and garnish with coriander leaves.

–     Top it with pepitas and enjoy a hot bowl.



My Notes :

**       Pine nuts or roasted flaked almonds can be used in place of pepitas.
