Marinated Radish Salad

Had a wonderful Radish salad last night and I just couldn’t get over it. These li’l red cuties always get into my shopping basket but end up in sambhars or stir fries. Their distinct smell always made me think twice before eating raw. Ventured it last night.

While chopping these li’l beauties I understood whether small or big they all have that pungent odour. So I decided to mask it with mint leaves. As radishes don have a taste of their own, the dressing is the star here. I made mine a bit hot. I added chilli flakes and pepper powder too. I also used the Lebanese spices, sumac and za’atar. I just doubled the za’atar and loved it.

This is a marinated salad. After preparing it, its kept to rest for an hour. And after an hour, the radish slices are well soaked in the dressing and absorbed the flavours too. The pungent smell is gone too. And my all-time-favorite rocket leaves are there too, to pep up the salad. And whats more……It is a delight to both eyes and tongue;

Preparation time : 15 min
Resting time : 1 hr
Serve With : By itself, Grilled Halloumi Cheese 
Serves : 1

What :

  •       1 bunch Radishes
  •       1 small Red Onion
  •       handful of Rocket Leaves
  •       1 tbsp Coriander Leaves
  •       1 tbsp Mint Leaves
  •       1 tsp Sumac
  •       1 tbsp Za’atar

….for dressing

  •       2 tsp Lemon Juice
  •       2 tbsp Extra Virgin Olive Oil
  •       2 tsp Red Chilli Flakes
  •       Pepper
  •       Salt

How :

               Chop the radishes into thin round slices. This is the only time taking task. Chop the red onion into long thin slices. Using hand separate the onions into individual slices. Fine chop coriander and mint leaves too. Put all these into a mixing bowl and mix well.

                 In another bowl, except the EVOO mix all ingredients till they are well incorporated. Add in the Olive oil, mix well.

                 Pour the dressing on the radishes. Give a nice mix and cover and keep aside for an hour.

                 Before serving, toss the rocket leaves, sumac and za’atar and enjoy…..!!!!!!

Tips & Notes :

**          Measurement is rough guide. Use it as per your taste.

**          After an hour of marination, water may ooze out. Pour it on the salad before serving. Its the soul of the salad.

**          I had it with a slice of Halloumi Cheese. Heaven.
